Its been a while.

I apologize for my absence in posting the last few weeks.  My computer crashed and I have had to learn how to navigate around my new one!

I am so proud of you guys!  Everyone is really making progress and we actually have several people who have lost 5 pounds already.  Awesome!



Thanks to Michael Cupples, I have found a fun new website to share with you guys!  Its called hungrygirl.com and is so totally cool.  The website has a lot of delicious, low calorie recipes for foods that are substituted for other higher calorie foods.  For instance, this week she does a burrito swap.  The hungry girl burrito is a healthier version of the Sonic Frito Chili Cheese Wrap, and is only worth 4 points versus 16 points for the Sonic burrito.  Go to http://www.hungrygirl.com/ and check it out!



Do you guys like yogurt?  If you do, then you already know that most yogurt (unless you buy light) is worth at least 3-4 points.  This week I tried the Weight Watchers brand of yogurt and it is SO YUMMY!  Wanna' know what the best part about it is?  Its only 1 point!

Happy Fall, Y'all!

I am so proud of all of you!  Everyone who has weighed in this week has lost at least 1/2 pound!  Way to go!  We are all so FABULOUS!

In the spirit of Fall, I thought I would share with you this recipe for Crackle Spice Drops.




1/2 cup(s) reduced-calorie margarine, soft

1/2 cup(s) unpacked brown sugar
1 large egg(s)
1 Tbsp vanilla extract
2 cup(s) all-purpose flour
1/2 tsp baking soda
1/4 tsp table salt
1 Tbsp pumpkin pie spice
1/4 cup(s) powdered sugar

Instructions
Preheat oven to 375°F.

In a mixing bowl, on medium speed, beat margarine with brown sugar until creamy. Add egg and vanilla extract; beat until light and fluffy. Stir in flour, baking soda, salt and spice.

Roll rounded teaspoonfuls of dough into powdered sugar to coat. Place onto baking sheet. Bake until golden, about 7 to 8 minutes. Yields 1 cookie per serving.

What is the best thing about these little cookies?  They are only 1 POINT EACH!  Fabulous, huh?

Do you know what these are?  They're sugar snap peas and I love them... a whole cup is only 1 point (Thank you, Jennifer Cox).  You can used spray salad dressing to give them a little flare, but I like them raw.

Delizioso!




My husband and I went out to eat at Olive Garden tonight, and I have to tell you, I was pleasantly surprised!  I was a little nervous since I LOVE PASTA, but I decided to go with the Venetian Apricot Chicken (it's on the low-fat menu) and it was SO YUMMY!  The best part about it is that it is only 7 points for the WHOLE THING!  Delish!  I ended up only eating 1 piece of chicken and half the broccoli and asparagus.  My entire dinner (including half of a bread stick and a small salad) was only 8 points!  So good, you have to try it!

Fabulous, Fabulous, Fabulous!

Can you guess what the key word is?  You got it! Fabulous!  Welcome ladies...I am so glad that you all decided to participate in this journey to becoming fit and fabulous!  On this blog you will find recipes, yummy snacks with low point values, exercise tips and much, much more!  All you need to do is create a google acount (its the easiest) so that you are able to comment and interact with others on the blog!  So, here it goes...

Recipe of the Week
Who doesn't love mexican food?  I haven't tried this one by it looks SUPER YUMMY!



Cheesy Chicken Enchiladas
6 points per serving

1 spray(s) cooking spray
8 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product
1/2 cup(s) fat-free sour cream
1/4 cup(s) fat-free evaporated milk
1/4 cup(s) scallion(s), green part only, minced
1/4 tsp crushed red pepper flakes
3 cup(s) cooked chicken breast, chopped*
6 medium whole wheat tortilla(s), 7-inches each
1/4 cup(s) low-fat shredded cheddar cheese, sharp variety
6 medium olive(s), green, pitted, sliced
1/4 cup(s) salsa

Instructions
Preheat oven to 350ºF. Coat a 9-inch glass baking dish with cooking spray.

In a microwave-safe bowl, combine cheese product and sour cream; cover and microwave on high power until cheese melts, about 1 1/2 to 2 minutes. Remove half of melted cheese to a small bowl and stir in evaporated milk; set aside. Add scallions, red pepper flakes and chicken to remaining cheese mixture; stir to coat.

Spoon about 2/3 cup of chicken mixture down center of each tortilla; fold in sides of tortilla to cover filling and place tortillas in a single layer in prepared dish; spoon remaining cheese sauce over top and then sprinkle with shredded cheddar cheese and olives.

Bake until cheese topping is bubbly, about 20 to 25 minutes. Serve with salsa. Yields 1 enchilada per serving.

Super Snack of the Week!



I am a cheese fanatic!  Weight Watchers doesn't allow you to have much cheese (unless you want to spend ALL of your points).  These are full-fat and only 1 point!  I spread them on an Orowheat Sandwich Thin with 5 thin slices of lean ham.  It makes a wonderful 4 point sandwich!
